[Ingredients]
16 large fresh oysters in shell
Fresh coriander sprigs
[Sauce]
2tsp finely chopped garlic
1tbsp finely chopped fresh root ginger
1tsp chili bean sauce
1tbsp shaoxing jiu (shaoxing rice wine)/dry sherry
1tbsp light soy sauce
2tsp dark soy sauce
2 seeded and chopped fresh red chilies
3tbsp finely shredded spring onion
3tbsp groundnut oil
[Steps]
Scrub oysters clean. Place oysters in the steamer in a single layer, you most probably have to do it in batches if your steamer is not big enough. Steam over low heat for 5mins or until they are open.
Meanwhile, combine all sauce ingredients together except groundnut oil in a heatproof bowl.
Pour oil into another heatproof bowl and set it over a pan of simmering water.
When the oil is very hot and slightly smoking, pour into the sauce. Mix well.
When oysters are ready, remove the top shells and some sauce over the oysters.
Serve garnished with coriander.
