Spicy Sichuan Prawns


[Ingredients]

  • 1 1/2tbsp groundnut oil

  • 2tsp finely chopped fresh root ginger

  • 1tbsp coarsely chopped garlic

  • 2tbsp finely chopped spring onion

  • 450g shelled and deveined prawns

[Sauce]

  • 1tbsp tomato paste

  • 2tsp chili bean sauce

  • 2tsp Chinese black vinegar/cider vinegar

  • 1/2tsp salt

  • 1/2tsp ground black pepper

  • 2tsp sugar

  • 2tsp sesame oil

[Steps]

  1. Heat a wok over high heat. Add oil and wait until it turns very hot and slightly smoking.

  2. Add ginger, garlic and spring onion. Stir fry 20secs.

  3. Add prawns and stir fry for 1min.

  4. Add all the sauce ingredients and stir fry for 3mins over high heat.

  5. Serve garnished with spring onion or coriander.
