Calamari


[Ingredients]

  • 200g frozen baby squid - defrost for 20mins

  • 2 to 3tbsp olive oil

  • 2 egg white

  • 2tbsp plain flour

  • Maldon sea salt

  • Tracklements chilli jam

[Steps]

  • Pat dry squids. Slice squids into smaller pieces if needed.

  • Heat 2tbsp of oil until very hot in a frying pan. Whisk egg whites till stiff.

  • Dip squids in flour then egg white. Fry for 45secs and drain on kitchen towels.

  • Serve sprinkled with salt and black pepper, with chili jam alongside.
