[Ingredients]
200g frozen baby squid - defrost for 20mins
2 to 3tbsp olive oil
2 egg white
2tbsp plain flour
Maldon sea salt
Tracklements chilli jam
[Steps]
Pat dry squids. Slice squids into smaller pieces if needed.
Heat 2tbsp of oil until very hot in a frying pan. Whisk egg whites till stiff.
Dip squids in flour then egg white. Fry for 45secs and drain on kitchen towels.
Serve sprinkled with salt and black pepper, with chili jam alongside.
