Black Pepper Crab


[Crab]

  • 250ml oil

  • 2kg fresh crabs

  • 1 thinly sliced spring onion

[Sauce]

  • 5tbsp butter

  • 7 cloves minced garlic

  • 2.5cm peeled and slivered fresh ginger

  • 7 deseeded and thinly sliced finger-length red chili

  • 2tbsp oyster sauce

  • 2tsp black soy sauce

  • 4tsp sugar

  • 3tbsp crushed black pepper

[Steps]

  1. Crab: Clean and quarter crabs. Heat oil in wok over high heat and stir fry crabs for 3mins. Cover and cook for 8mins until the shell changes colour. Remove from heat, drained and set aside.

  2. Sauce: Heat butter and 2tsp of oil in a wok over low heat. Add chilies and saute for 2mins. Add oyster sauce, soy sauce, black soy sauce and sugar, simmer for 30secs. Season with pepper.

  3. Cook until the sauce starts to thicken, then return crabs to wok. Toss and coat crabs with the sauce. Garnish with freshly sliced spring onion.
