[Ingredients]
1kg crab
4 stalks spring onion
2 red chilies
50g ginger slices
1tbsp pepper
1tbsp hua tiao jiu (Chinese cooking wine)
Salt
[Steps]
Prepare crab, rinse and cut into 4 pieces.
Rinse spring onion and cut into sections.
Remove seeds from chilies and cut into slanted slices.
Heat 4tbsp oil in a wok. Stir fry ginger till fragrant.
Add in white sections of spring onion, chili and crab. Stir well.
Pour in some water. Stir briefly and simmer covered for 5mins.
Add in pepper, spring onion, salt and wine. Mix well and remove from heat.
