Salmon Kebab


[Ingredients]

  • 2tbsp fresh oregano - chopped

  • 2tsp sesame seed

  • 1tsp ground cumin

  • 1/4tsp crushed chilli flakes

  • 1 1/2 pound salmon fillet - cut into 1inch cubes

  • 2 lemons - thinly sliced into rounds

  • Cooking spray - olive oil

  • 1tsp salt

  • 16 bamboo skewers - soaked in water 1hr

[Steps]

  1. Mix oregano, sesame seeds, cumin and chilli flakes together. Set aside.

  2. Starting and ending with salmon, thread salmon and lemon slices onto 8 pairs of parallel skewers, making 8 kebabs. Spray lightly with oil and season with salt and spice mixture.

  3. Grill over medium heat until fish is cooked thru, about 8-10mins.
