[Ingredients]
220g yam - peeled and cut into cubes
2 cups rice grains
60g dried shrimps - soaked till soft, roughly chopped
8pcs Chinese mushrooms - soaked till soft, diced and reserve 250ml soaking water
80g wax sausage - soaked till soft, diced
450g pork belly - slice into 1cm strips
10 shallots - peeled and thinly sliced
6 cloves garlic - chopped
100ml water
2 tbsp cooking oil
[Seasoning]
1.5 tbsp oyster sauce
2 tbsp light soy sauce
1.5 tbsp dark soy sauce
1 tbsp sesame oil
2 tbsp shaoxing wine (绍兴酒)
0.5 tsp sugar
0.5 tsp pepper
[Steps]
Wash and drain rice, set aside.
In a pan heated with 1 tbsp of oil, add in pork belly and pan-fry till browned. Set aside.
In the same pan, add in yam cubes and stir-fry till browned. Set aside.
In the same pan, add in 1 tbsp of oil, followed by garlic, shallots, sausage and dried shrimp, stir-fry till fragrant.
Add in mushrooms, rice, pork belly and yam, mix well. Followed by seasoning ingredients.
Transfer mixture to rice cooker and set it to cook.
