Rice Cooker Lo Mai Gai


[Ingredients]

  • 600g chicken thigh meat - cut into pieces

  • 6 dried chinese mushrooms - soaked for 4hrs

  • 2 cups glutinous rice - soaked for 4hrs

  • 1 taiwan sausage / waxed sausage - sliced

  • 1tbsp dark sweet soy sauce

  • 2tsp sesame oil

  • 1tsp sugar

  • 1tbsp oyster sauce

  • 2tsp light soy sauce

  • 1/2tsp pepper

  • 2tsp cornstarch


[Steps]

  1. Reserve mushroom water. Remove stems and slice mushrooms.

  2. In a bowl, add in mushrooms, chicken and condiments and mix well. Let marinate for 20mins.

  3. Drain rice grains and add into rice cooker. Add in 1 cup chicken stock and 3/4 cup mushroom water. Mix well.

  4. Place chicken and mushroom over the rice, followed by the sausage. Set to cook - normal rice mode.

  5. When it’s done, give it a good stir.
