[Ingredients]
600g chicken thigh meat - cut into pieces
6 dried chinese mushrooms - soaked for 4hrs
2 cups glutinous rice - soaked for 4hrs
1 taiwan sausage / waxed sausage - sliced
1tbsp dark sweet soy sauce
2tsp sesame oil
1tsp sugar
1tbsp oyster sauce
2tsp light soy sauce
1/2tsp pepper
2tsp cornstarch
[Steps]
Reserve mushroom water. Remove stems and slice mushrooms.
In a bowl, add in mushrooms, chicken and condiments and mix well. Let marinate for 20mins.
Drain rice grains and add into rice cooker. Add in 1 cup chicken stock and 3/4 cup mushroom water. Mix well.
Place chicken and mushroom over the rice, followed by the sausage. Set to cook - normal rice mode.
When it’s done, give it a good stir.
