Abacus Seeds with Minced Meat

[Ingredients]
600g yam - peeled, sliced
300g tapioca flour
150ml boiling water
3tbsp oil
1tbsp minced garlic
3 shallots - sliced
300g minced meat
50g dried shrimp - soaked
5 dried mushroom - soaked, cut into strips
1 fried beancurd - cut into cubes
1tbsp light soy sauce
2tbsp oyster sauce
1/2tsp pepper
2tbsp hua diao jiu
1/4 cup chopped scallion
[Steps]
Steam yam for 25-30mins.
Transfer yam to a large mixing bowl. Mash yam with a fork while it's hot.
Add in tapioca flour, mix well.
Stir in boiling water, a little at a time. Mix till a dough forms.
Transfer dough to a floured worktop. Knead dough till smooth.
Divide dough into 4 portions. Roll each portion out into a long rope and cut into 1 inch pieces.
Roll each piece of dough into a ball and make a dent in the middle.
Boil 'abacus seeds' in water till they float. Transfer to a bowl of cold water and let cool. Drain and set aside.
In a pan, add in oil, garlic and shallots, cook till fragrant.
Add in minced meat, stir-fry and break meat apart.
Drain dried shrimps and mushrooms, and add them in. Stir well.
Followed by beancurd, light soy sauce, oyster sauce, pepper and hua diao jiu. Stir-fry until fragrant.
Add in abacus seeds and scallion. Stir well and serve.
