[Ingredients]
1 yellow onion - peeled, chopped
3 tomatoes - deseeded, chopped
1 red capsicum - deseeded, diced
3tbsp olive oil
3 cloves of garlic
5g saffron
Salt
2tsp sweet paprika
1 cup arborio rice
1 cup wine
3 cups seafood/chicken stock
2 medium squid - sliced
16 clams
8 mussels
6 prawns
1/2 cup green peas
Chopped parsley
Lemon wedges
[Steps]
Add olive oil into a frying pan over low fire. Add in onions and saute till transparent.
Add in tomatoes and capsicum, and grate garlic in. Stir well.
Add in saffron, salt and paprika, saute for 2-3mins.
Add in rice and mix well.
Add in wine and cook till reduced.
Add in stock and cook over medium fire for 20-25mins.
Add in squids, clams, mussels and prawns. Cover and cook for another 10mins.
Add in peas and parsley, and serve with lemon.
