Prawn Paste Chicken (Har Cheong Gai)


[Ingredients]

  • 12 chicken mid wings

  • 2tbsp prawn paste

  • 1tbsp sugar

  • 1tbsp sesame oil

  • 2tbsp shao xing jiu

  • 1tbsp oyster sauce

  • 1/2tsp pepper

  • 6tbsp plain flour

  • 6tbsp potato starch

  • 1 egg

  • 50ml water

  • 1/4tsp baking powder

[Steps]

  1. Add chicken, prawn paste, sugar, sesame oil, shao xing jiu, oyster sauce and pepper in a large mixing bowl, and mix well.

  2. Transfer to a ziploc bag and let marinade chilled for 4hrs.

  3. Add plain flour, starch, baking powder and egg into a mixing bowl. Gradually mix in water and mix into a smooth batter.

  4. Coat wings in batter. Deep-fry wings in oil at 180degC for 3-4mins until they are golden brown.
