[Ingredients]
12 chicken mid wings
2tbsp prawn paste
1tbsp sugar
1tbsp sesame oil
2tbsp shao xing jiu
1tbsp oyster sauce
1/2tsp pepper
6tbsp plain flour
6tbsp potato starch
1 egg
50ml water
1/4tsp baking powder
[Steps]
Add chicken, prawn paste, sugar, sesame oil, shao xing jiu, oyster sauce and pepper in a large mixing bowl, and mix well.
Transfer to a ziploc bag and let marinade chilled for 4hrs.
Add plain flour, starch, baking powder and egg into a mixing bowl. Gradually mix in water and mix into a smooth batter.
Coat wings in batter. Deep-fry wings in oil at 180degC for 3-4mins until they are golden brown.
