[Ingredients]
225g butter + 25g melted for brushing
Cocoa powder - for dusting
300g dark chocolate (at least 70% cocoa) - broken into pieces
400g caster sugar
1/2tsp vanilla essence
5 large eggs - beaten
220g plain flour
8 x 175ml metal ramekin
[Steps]
Preheat oven 180degC.
Brush ramekin with melted butter and coat with cocoa powder. Shake off excess.
Place chocolate and 225g of butter in a saucepan and heat over low fire, stirring occasionally till smooth and glossy.
Whisk in sugar, followed by vanilla, and then eggs - one at a time.
Fold in flour and divide mixture among ramekins.
Place ramekins on a baking tray and bake for 17mins.
Remove from oven and leave for 30secs.
Run a knife around the edges and invert onto serving plates. Serve with vanilla ice cream/cream/creme fraiche.
