Chocolate Lava Cake


[Ingredients]

  • 225g butter + 25g melted for brushing

  • Cocoa powder - for dusting

  • 300g dark chocolate (at least 70% cocoa) - broken into pieces

  • 400g caster sugar

  • 1/2tsp vanilla essence

  • 5 large eggs - beaten

  • 220g plain flour

  • 8 x 175ml metal ramekin

[Steps]

  1. Preheat oven 180degC.

  2. Brush ramekin with melted butter and coat with cocoa powder. Shake off excess.

  3. Place chocolate and 225g of butter in a saucepan and heat over low fire, stirring occasionally till smooth and glossy.

  4. Whisk in sugar, followed by vanilla, and then eggs - one at a time.

  5. Fold in flour and divide mixture among ramekins.

  6. Place ramekins on a baking tray and bake for 17mins.

  7. Remove from oven and leave for 30secs.

  8. Run a knife around the edges and invert onto serving plates. Serve with vanilla ice cream/cream/creme fraiche.
