[Ingredients]
285g (3/4 cup) Lee Kum Kee char siu (Chinese barbecue) sauce
2tbsp grated ginger
2tbsp sesame oil
2tbsp lime juice
1 1.6kg chicken, backbone removed and halved
[Steps]
Preheat oven 200degC.
Place char siu sauce, ginger, sesame oil and lime juice in a large mixing bowl and mix well.
Reserve 1/4 cup of the marinade and add chicken into the remaining marinade. Coat well and chill for 30mins.
Place chicken on a lightly greased parchment paper lined baking tray and bake for 40mins, or until chicken is dark brown and cooked through, brushing chicken occasionally with reserved char siu marinade.
