Char Siu Chicken

[Ingredients]

  • 285g (3/4 cup) Lee Kum Kee char siu (Chinese barbecue) sauce

  • 2tbsp grated ginger

  • 2tbsp sesame oil

  • 2tbsp lime juice

  • 1 1.6kg chicken, backbone removed and halved

[Steps]

  1. Preheat oven 200degC.

  2. Place char siu sauce, ginger, sesame oil and lime juice in a large mixing bowl and mix well.

  3. Reserve 1/4 cup of the marinade and add chicken into the remaining marinade. Coat well and chill for 30mins.

  4. Place chicken on a lightly greased parchment paper lined baking tray and bake for 40mins, or until chicken is dark brown and cooked through, brushing chicken occasionally with reserved char siu marinade.
