Lapis Sagu


[Ingredient A]

  • 50g sifted rice flour

  • 120g sifted green bean flour

  • 220g sifted tapioca flour

  • 300ml thick coconut milk

  • 150ml water

  • Food colouring

[Ingredient B]

  • 420g sifted sugar

  • 300ml thick coconut milk

  • 150ml water

[Steps]

  1. Mix B together. Bring to boil and stir till sugar dissolves. Set aside.

  2. Combine A ingredients together except food colouring. Stir till mixture is smooth.

  3. Stir in B. Divide batter into several portions (depending on how many different colours you want) and stir in a few drops of food colouring.

  4. Grease a 7inch square baking tin and lined it with greaseproof paper.

  5. Place baking tin in the steamer and steam for 5mins.

  6. Remove tin from steamer and pour 1/2cup of batter for the first colour and steam for 5mins.

  7. Remove tin from steamer and pour 1/2cup of batter of the second layer and steam for 5mins.

  8. Keep repeating until all the batter are used up.

  9. After pouring in the last layer, steam for 15mins to cook thru. Remove from heat and let cool then cut into serving slices.
