[Ingredients]
250g minced meat
100g prawns - shelled and chopped/minced
1/2tsp salt
1tsp sugar
1/2tsp black pepper
1/2tbsp light soy sauce
2tsp sesame oil
1/2 egg white
Spring onions - chopped
Wanton skins
[Steps]
Rinse minced meat over a sieve to cleanse meat and wash away the blood. Press meat against the sieve to drain out all the water.
Place meat in a bowl. Using your hand, grab the meat and throw it back to the bowl with strength, several times. This is to create texture in the meat. Meat is ready when it sticks to the bowl when the bowl is overturned.
Add in prawn and spring onion, mix well.
Place salt, sugar, pepper, soy sauce and sesame oil in a small bowl and mix well.
Pour seasoning into meat mixture, mix well, followed by egg white.
[Optional] Heat up your pan and cook a spoonful of meat till cooked. Try it and see if it's okay. Adjust seasoning if needed.
Grab a piece of skin, place a teaspoonful of filling in the center. Use water as the adhesive to stick the skin together - make sure the skin remains dry on the outside, so just put enough water will do.
Heat up the oil and fry wantons till golden brown.
