Japanese Potato Salad

[Ingredients]

  • 1 medium potato

  • Small piece of Japanese cucumber

  • 2.5cm length carrot

  • 2tbsp Japanese mayonnaise

  • Salt and pepper

[Steps]

  1. Deseed and thinly slice cucumber. Sprinkle with some salt and massage until cucumber is limp. Squeeze out excess moisture.

  2. Wash potato. Score a line around in the middle. Wrap it in a piece of kitchen towel, then plastic wrap. Wrap carrot in plastic wrap. Microwave both on high for 3mins.

  3. Unwrap potato and remove skin gently.

  4. Cut potato into 1cm cubes. Cut carrots into half rounds. Place in a small bowl and mix well with mayo, salt and pepper. Fold in cucumber.
