Butter Garlic Scallops

[Ingredients]

  • 200g frozen scallops

  • 2 clove peeled garlic

  • 75g softened butter

  • 1tbsp dried breadcrumbs

  • 1tbsp olive oil

  • Handful of parsley leaves

[Steps]

  1. Preheat grill for 10mins at high.

  2. Put garlic, butter, parsley, breadcrumbs and some salt into a blender and blend into a paste.

  3. Place scallops into 2 heatproof dishes and grill for 4mins.

  4. Dot butter mixture all over scallops and leave to cook for another 3mins. Stir scallops round in the melted butter and cook for another 3 to 4mins until scallops are opaque.

  5. Sprinkle chopped parsley over and serve with lemon wedges.
