[Ingredients]
200g frozen scallops
2 clove peeled garlic
75g softened butter
1tbsp dried breadcrumbs
1tbsp olive oil
Handful of parsley leaves
[Steps]
Preheat grill for 10mins at high.
Put garlic, butter, parsley, breadcrumbs and some salt into a blender and blend into a paste.
Place scallops into 2 heatproof dishes and grill for 4mins.
Dot butter mixture all over scallops and leave to cook for another 3mins. Stir scallops round in the melted butter and cook for another 3 to 4mins until scallops are opaque.
Sprinkle chopped parsley over and serve with lemon wedges.
