Jalapeno Shrimp Cakes


[Ingredients]

  • 1lb shrimp - peeled and deveined

  • 1 large jalapeno - seeded and minced

  • 1 clove garlic - minced

  • 3 spring onion - chopped

  • 2tbsp chopped coriander

  • 2tbsp panko breadcrumbs

  • 1/4tsp salt

  • 1/8tsp black pepper

  • 4 lime wedges

  • 1/2 avocado - into 8 wedges

[Steps]

  1. Pat dry shrimp and process with jalapeno and garlic into a paste.

  2. Combine shrimp paste with spring onion, coriander, breadcrumbs, salt and pepper.

  3. Mix well and form mixture into 4 patties.

  4. Heat a non-stick pan over medium heat and spray with oil. Cook patties for 4mins, flip over and cook for another 4mins.

  5. Serve each patty with a lime wedge and avocado slices.
