[Ingredients]
1lb shrimp - peeled and deveined
1 large jalapeno - seeded and minced
1 clove garlic - minced
3 spring onion - chopped
2tbsp chopped coriander
2tbsp panko breadcrumbs
1/4tsp salt
1/8tsp black pepper
4 lime wedges
1/2 avocado - into 8 wedges
[Steps]
Pat dry shrimp and process with jalapeno and garlic into a paste.
Combine shrimp paste with spring onion, coriander, breadcrumbs, salt and pepper.
Mix well and form mixture into 4 patties.
Heat a non-stick pan over medium heat and spray with oil. Cook patties for 4mins, flip over and cook for another 4mins.
Serve each patty with a lime wedge and avocado slices.
