Curry Shrimp Salad


[Ingredients]

  • 1 pound cocktail shrimp - shelled and cooked

  • 1/4 cup fat-free greek yogurt/mayonnaise

  • Salt and black pepper

  • 1tbsp lemon juice

  • 2tsp olive oil

  • 1/2tsp curry powder

  • Fresh oregano or thyme - finely chopped

  • Mixed salad greens

[Steps]

  1. Combine yogurt/mayo, salt, pepper, lemon juice, olive oil and curry powder together.

  2. Rinse shrimps with cold water and pat dry. Fold shrimps and fresh oregano/thyme in.

  3. Serve shrimps on a bed of chilled salad greens.
