[Ingredients]
1 pound cocktail shrimp - shelled and cooked
1/4 cup fat-free greek yogurt/mayonnaise
Salt and black pepper
1tbsp lemon juice
2tsp olive oil
1/2tsp curry powder
Fresh oregano or thyme - finely chopped
Mixed salad greens
[Steps]
Combine yogurt/mayo, salt, pepper, lemon juice, olive oil and curry powder together.
Rinse shrimps with cold water and pat dry. Fold shrimps and fresh oregano/thyme in.
Serve shrimps on a bed of chilled salad greens.
