[Ingredients]
Juice and zest of 1/2 orange
Juice of 1 lime
Salt and pepper
1 clove garlic - thinly sliced
1 1/2tsp chilli powder
1/2tsp cumin
Small handful of coriander - chopped
2tbsp olive oil
4 salmon fillets (6oz each)
[Salsa]
1/2 pint strawberries - hulled and diced
1 large avocado - diced
1/4 cup red onion - finely diced
1 jalapeno - seeded and diced
Small handful of coriander - chopped
Juice of 1/2 orange
Juice of 1/2 lemon
Pinch of salt
[Steps]
Heat grill to medium high and oil it.
Whisk marinade ingredients together and transfer to a shallow dish. Place fillets flesh side down and marinade for 10mins.
Grill fish skin side down for 10-12mins until the thickest part of the fish turns opaque.
While cooking the fish, prepare the salsa by stirring all the ingredients together.
Serve fillet seasoned with salt and pepper, topped with a huge scoop of salsa.
