[Ingredients]
1tsp olive oil
4 flounder fillets (or any other white fish)
3/4 cup chopped onion
2 cloves minced garlic
3/4 diced green capsicum
2 1/2 cups chopped tomatoes
1tbsp cajun spice seasoning
[Steps]
In a deep pot, cook onion and garlic in olive oil on medium heat for a few mins until soft.
Add tomatoes, peppers and spices. Stir and cook until tomatoes are soft, about 2-3mins.
Lay fillets in the sauce. Cover and cook on medium-low heat until fish flakes easily, about 12-15mins.
To serve, place fillet on serving plate and spoon sauce over. Serve immediately.
