Cajun Spiced Flounder with Tomatoes


[Ingredients]

  • 1tsp olive oil

  • 4 flounder fillets (or any other white fish)

  • 3/4 cup chopped onion

  • 2 cloves minced garlic

  • 3/4 diced green capsicum

  • 2 1/2 cups chopped tomatoes

  • 1tbsp cajun spice seasoning

[Steps]

  • In a deep pot, cook onion and garlic in olive oil on medium heat for a few mins until soft.

  • Add tomatoes, peppers and spices. Stir and cook until tomatoes are soft, about 2-3mins.

  • Lay fillets in the sauce. Cover and cook on medium-low heat until fish flakes easily, about 12-15mins.

  • To serve, place fillet on serving plate and spoon sauce over. Serve immediately.
