[Ingredients]
450g lean beef steak
1tbsp light soy sauce
2tsp sesame oil
1tbsp shaoxing jiu (shaoxing rice wine)/dry sherry
2tsp cornstarch
3tbsp groundnut oil
3tbsp oyster sauce
1 1/2tbsp finely chopped spring onion
[Steps]
Cut beef into 5mm thick slices, cutting against the grain of the meat.
Place beef, soy sauce, sesame oil, wine and cornstarch into a bowl. Mix well and leave to marinade for 20mins.
Heat the wok until very hot, add groundnut oil.
When oil is very hot and slightly smoking, add beef and stir fry for 5mins until lightly browned.
Remove meat from heat and drain off excess liquid.
Wipe the wok clean and reheat over high heat. Add oyster sauce and bring to simmer.
Add beef in and toss them thoroughly.
Transfer to a serving plate and serve garnished with spring onion.
