[Ingredients]
24oz chicken breast
14 . 4oz diced tomatoes
15oz canned black beans
8oz corn kernels
1/4 cup chopped cilantro
14.4oz canned fat-free chicken broth
3 chopped scallions
1tsp garlic powder
1tsp onion powder
1tsp ground cumin
1tsp cayenne pepper
Salt
[Steps]
Combine broth, beans, corn, tomatoes, cilantro, scallions, garlic, onion, cumin, cayenne pepper and salt in a crock pot.
Season chicken with salt and lay on top. Cook on low for 10hrs and then on high for 6hrs.
Half an hr before serving, shred chicken then stir in. Adjust seasoning. Serve with rice or tortillas.
