[Ingredients]
50g diced boneless chicken drumstick
1/2tsp sugar
1/2 egg white
1/4tsp sesame oil
1tbsp cooking oil
5g chopped spring onion
5g peeled and sliced ginger
5g sliced fresh button mushroom
5g diced red chili
40ml chicken consomme
1tsp fermented black bean sauce
2tsp oyster sauce
1tsp sugar
1tsp cornstarch
5tsp hua tiao jiu (Chinese cooking wine)
Cornstarch solution (1 1/4tsp + 2tsp water)
Roasted white sesame seeds
[Steps]
Marinate chicken with salt, sugar, egg, cornstarch and sesame oil.
Heat oil in wok and sear chicken lightly.
Add remaining ingredients except starch solution and sesame seeds. Saute for a few mins until chicken is cooked.
Thicken sauce with starch solution and served garnished with sesame seeds.
Chicken Consomme: 4 litres water, 1kg chicken, 750g lean meat, 330g Chinese (Yunnan) ham.
Bring water to boil.
Add in chicken, meat and ham.
Simmer over low heat for 8hrs or until only 2 litres of stock is left in the pot.
Strain stock and discard contents.
