[Chicken]
1kg whole chicken cut into pieces
Oil for deep frying
12 soaked Chinese mushrooms with stems removed
10 halved button mushrooms
1tbsp butter
3 large peeled and thinly sliced lengthwise potato
[Marinade]
1 lightly beaten egg
2tbsp soy sauce
1tbsp oyster sauce
1/2tbsp black soy sauce
1/2tsp pepper
[Sauce]
1tbsp oil
5 cloves minced garlic
3 star anise
1 cinnamon stick
6cm peeled and sliced fresh ginger
4tbsp rice wine
2tbsp soy sauce
1tbsp black soy sauce
1tbsp oyster sauce
2tsp sugar
1tsp sesame oil
1/2tsp five spice powder
2tsp cornstarch mixed with 2tbsp water
[Steps]
Marinade: Mix ingredients together in a bowl. Rub into chicken and set aside for 10mins. Pat chicken dry and deep fry in very hot oil until half cooked, about 3mins.
Sauce: Heat oil over high heat and stir fry garlic, star anise and cinnamon for 1min. Add deep fried chicken, Chinese mushroom, button mushroom and ginger, stir fry for 3mins.
Add remaining ingredients, except cornstarch and simmer for 2mins. Add cornstarch liquid and stir till sauce thickens. Remove from heat and set aside to cool. Serve hot.
