Minced Pork with Salted Fish 咸鱼肉饼


[Ingredients] 材料

  • 350g minced pork 肉碎 350 克

  • 2 pcs (40g) salted fish preserved in oil 油泡咸鱼 2 块(40 克)

  • 5 ginger slices, julienned 姜 5 片,切丝

[Others] 其他

  • 1/2tsp salt 盐 1/2 茶匙

  • 1/8tsp white pepper powder 白胡椒粉 1/8 茶匙

  • 1tsp sesame oil 麻油 1 茶匙

  • 1tbsp shaoxing wine 绍兴酒 1 汤匙

  • 2tbsp water 水 2 汤匙

  • 2tsp corn starch 玉米粉 2 茶匙

  • 1 spring onion, chopped 青葱 1 条,切片

[Steps] 步骤

  1. In a bowl, combine pork, salt, pepper, sesame oil, shaoxing wine and water. Mix well and add in corn starch. 将肉碎,盐,胡椒粉,麻油,绍兴酒和水放入碗中拌匀,然后加入玉米粉。

  2. Using a pair of chopsticks, stir everyone in one direction until the mixture becomes sticky. Set aside for 10mins. 用筷子将混合料顺同一方向搅拌至成胶状。搁旁 10 分钟。

  3. Transfer pork mixture to a depp steaming plate. 将猪肉混合料放入深蒸碟内。

  4. Break salted fish with your hands and sprinkle over pork. Top with ginger. 用手将咸鱼肉弄碎,撒在猪肉混合料上,再撒上姜丝。

  5. Steam over high heat for 15mins. Garnish with spring onion. 用大火蒸 15 分钟,取出,撒上葱花。
