1/2 chicken (500g), cut into pieces 鸡 1/2 只(500 克),切块
5 dried Chinese mushrooms 冬菇 5 朵
2 ginger slices 姜 2 片

1 star anise 八角 1 块
1tbsp light soy sauce 酱青 1 汤匙
1.5tbsp oyster sauce 蚝油 1.5 汤匙
1tsp dark soy sauce 酱油 1 茶匙
1/2tbsp shaoxing wine 绍兴酒 1/2 汤匙
1tsp sugar 糖 1 茶匙
1 cup (250ml) water 水 1 杯(250 毫升)
2tbsp cooking oil 油 2 汤匙
[Steps] 步骤
Soak mushrooms in water until they are softened. Keep soaking water for later use. 冬菇泡入水中浸软。浸泡水留用。
Heat oil in wok over medium-high heat and stir-fry ginger till fragrant. Add in chicken and stir-fry till golden brown. 镬中用中大火烧热油,放入姜炒香。放入鸡块,炒至金黄色。
Add in mushrooms and stir-fry for a while. 放入冬菇,翻炒。
Add mushroom water, star anise, light soy sauce, oyster sauce, dark soy sauce, shaoxing wine and sugar. Add more water until it covers the chicken and mushrooms. Bring to a boil. 倒入浸泡水,八角,酱青,蚝油,酱油,绍兴酒和糖。再加少许水至盖过鸡和冬菇,煮滚。
Simmer over low heat until all water evaporates, about 1hr. 用小火焖煮约 1 小时至所有水分蒸发。
