2 eggs, beaten 蛋 2 颗,打散
1 tomato, quartered 番茄 1 粒,切成 4 块
2 cloves garlic, minced 蒜 2 粒,切蓉

1tsp sugar 糖 1 茶匙
Ground white pepper 白胡椒粉
1.5tbsp oil 油 1.5 汤匙
1tbsp water 水 1 汤匙
1 spring onion, chopped 青葱 1 条,切碎
[Steps] 步骤
Heat 1tbsp of oil in a wok over medium-high heat. Add eggs and stir-fry till eggs are slightly set, about 30secs. Transfer to plate and set aside. 镬中用中大火烧热 1 汤匙油,倒入鸡蛋,搅拌约 30 秒至蛋稍微凝固。转放入碟中,搁旁备用。
Heat 1/2tbsp of oil in a wok over medium-high heat and stir-fry garlic until fragrant. 镬中用中大火烧热 1/2 汤匙油,炒香蒜蓉。
Add tomatoes and stir-fry until tomatoes are slightly browned, about 1min. 放入番茄,炒约 1 分钟至番茄稍微变黄。
Add water and cover with a lid. Simmer for 3mins. 倒入水,加盖闷 3 分钟。
Add in cooked egg, salt, sugar and pepper, and stir well. Transfer to serving dish and garnish with spring onion. 加入蛋,盐,糖和胡椒,拌匀,上碟。撒上葱花。
