[Ingredients]
1/2kg traditional popiah skin
2 large jicama - peeled
1 carrot
3 cloves of garlic - chopped
5 shallots - peeled, sliced
1tbsp oil
1tbsp light soy sauce
1tbsp oyster sauce
Pepper
1tbsp sugar
1 cup of water
3 hard-boiled eggs - chopped
1 cup ground peanut
1 green leaf lettuce
1 cup blanched bean sprouts - ends removed
1 cup fried pork skin
1 cup poached prawns - peeled
1/2 cup sweet flour sauce
[Steps]
Grate jicama and carrot.
Add oil to pan. Add in garlic and shallots, cook till fragrant.
Add in jicama and carrot, followed by light soy sauce, oyster sauce, pepper, sugar and water. Let simmer for 20mins.
Overlap 2 slices of popiah skin. Spread 1tbsp of sauce onto skin. Add 1/2 a lettuce leaf, handful of bean sprouts, 2 spoonfuls of jicama-carrot mix (press away liquid), eggs, peanuts, pork skin and prawns.
Fold in the sides and roll tightly, then cut into slices.
