Kimchi


[Ingredients]

  • 1 2kg napa cabbage

  • 1/3 cup salt

  • 1 carrot - julienne

  • 3 leeks - sliced

  • 1 scallion - sliced

  • 1/2 singo pear - julienne

  • 1/3 cup garlic cloves

  • 1/3 cup sliced yellow onions

  • 1 knob of ginger - sliced

  • 1/3 cup fish sauce

  • 3/4 cup Korean chilli flakes

  • Juice of 6 calamansi

  • 1/4 cup sweet rice flour + 1 cup water + 2-3tsp sugar

[Steps]

  1. Slice cabbage into smaller pieces and place in a large mixing bowl. Add in salt and leave to soak for 1.5hrs.

  2. Rinse cabbage and place in a large clean bowl.

  3. In a pot over fire, add in water, sugar and rice flour, mix well.

  4. In a blender, add in garlic, onion, ginger and fish sauce; blend well. Pour into a large clean bowl.

  5. Add in flour mixture, mix well, followed by chili flakes.

  6. Add in carrot, leeks, scallion and pear, mix well. Then add to cabbage and mix well.

  7. Place vegetables in a jar and leave outside for a day.
