[Ingredients]
70g store-bought pickled ginger + 2tbsp pickling liquid
2tbsp honey
60ml soy sauce
600g chicken thigh - trimmed and cut into 1inch cubes
1tbsp vegetable oil
Toasted sesame seeds
Cracked black pepper
[Steps]
Place ginger, pickling liquid, honey and soy sauce in a large mixing bowl. Mix well and add in chicken. Toss to coat, let marinade for 10mins.
Thread chicken and ginger into 12 skewers.
Preheat a char-grill pan over medium heat.
Brush skewers with oil and cook, turning, for 6-8mins or until goldeb and cooked thru.
While the chicken is cooking, place remaining marinade in a small saucepan and cook over medium heat. Bring to a simmer and cook for 3-4mins or until reduced and of a syrup consistency.
Brush skewers with reduced marinade and serve sprinkled with sesame seeds and black pepper.
