[Ingredients]
220g caster sugar
250ml water
8 Lebanese cucumber + extra - shaved
8 stalks of celery - cut into smaller pieces
125ml lime juice
125ml gin
1 cup ice
250ml soda water
[Steps]
Place sugar and water in a small saucepan over medium heat and bring to boil. Remove from heat and chill to cold.
Place cucumber and celery in a juicer*.
Place lime juice, gin, sugar syrup, celery-cucumber juice and ice in a blender and blend.
Place ice and shaved cucumber into glasses. Pour blended juice (step 3) into prepared glasses and top with soda water.
*If you don't have a juicer, you can blend the cucumber and celery in a blender and strain juice thru a sieve.
