[Ingredients]
400g chicken thigh
1 stalk scallion - chopped
3 cloves of garlic
10g ginger
1tsp salt
1tsp sugar
3tbsp water
1tbsp rice wine
1/2tsp baking soda
1tsp chicken powder
1tbsp light soy sauce
1/2tsp pepper salt
30g basil leaves
200g cornstarch
1tbsp pepper salt
[Steps]
Slice chicken into cubes.
Place chicken and scallion into a large mixing bowl. Grate in garlic, followed by ginger.
Add in salt, sugar, water, rice wine, baking soda, chicken powder, 1/2tsp pepper salt and soy sauce. Mix well and let marinade for 30mins.
In another mixing bowl, sift cornstarch and add in 1tbsp pepper salt.
Coat chicken in starch mixture and deep-fry in oil till golden brown.
Deep-fry basil for 15secs. Drain and mix with chicken.
