[Ingredients]
3 ripe mangoes
400ml (1 can) carnation milk
2.5tbsp gelatin powder
1 cup water
1/2 cup sugar (adjust sugar according to sweetness of mango)
[Steps]
Sprinkle gelatin over water in a heatproof bowl, let bloom.
Puree 2 mangoes and dice 1 mango.
Place gelatin water over a pan of simmering water.
When water turns clear (as gelatin has melted), whisk in sugar until dissolve. Remove bowl from heat.
Whisk in mango puree and milk. Divide mixture among 7-8 serving bowls.
You can either place the diced mango into the pudding or garnish (as shown) when pudding has set.
Chill for at least 2hrs, or overnight.
