White Chocolate Fudge Brownie Squares


Yields: 30 pieces

  • Betty Crocker fudge brownie mix (x 1 box)

  • Other required ingredients for brownie mix

  • White compound chocolate (x 100g)

  • Blue gel/paste food colouring

  • White sprinkles (x 50g)

  • Mini paper cases (x 30)

  • 6 x 8 inch rectangular cake pan

  1. Preheat oven as instructed.

  2. Prepare brownie batter as instructed.

  3. Grease and line cake pan with parchment paper. Pour batter in and tap pan against worktop to remove excess air bubbles.

  4. Bake as instructed or till an inserted skewer comes out clean.

  5. Turn brownie out onto another parchment paper and peel hot parchment paper off. Transfer the brownie together with the new parchment paper onto a wire rack and allow to cool completely.

  6. When brownie has cooled, trim off the edges and slice them into 1 inch squares. Place each square on a piece of paper case.

  7. If chocolate comes in a bar, chop them up into smaller pieces to ensure even heating. Microwave for 30secs and give it a stir. Continue to heat and stir at 20secs intervals till chocolate is completely melted.

  8. Add in colouring and mix well.

  9. Transfer chocolate into a small piping bag and snip off the tip. Pipe a perimeter around the edges of the brownie and fill it in.

  10. Sprinkle sprinkles over and allow chocolate to dry and set.

  11. Keep chilled.
