[Ingredients]
800g squid - cleaned and cut into 4cm pieces
4 cloves of garlic - chopped
2 1/2tbsp smoked paprika
Vegetable oil - for deep frying
150g cornstarch
75g self raising flour
310ml cold soda water
1tbsp sea salt flakes + extra to serve
150g whole-egg mayonnaise
1tbsp lemon juice
[Steps]
Place squid, garlic, oregano and half the paprika in a large bowl, mix well and leave to marinade for 10mins.
Half fill a saucepan with oil. Heat over medium fire till 180degC.
Place 1tbsp of paprika, cornstarch, flour, soda water and salt in a bowl. Mix well.
Dip squid in batter and fry for 3mins or till crisp. Remove from oil and drain on kitchen towels.
Place mayonnaise, lemon juice and remaining paprika in a small bowl, mix well.
Serve squid sprinkled with sea salt and dipping sauce.
