Scotch Eggs


[Ingredients]

  • 500g good quality sausage meat

  • 1tsp ground allspice

  • Leaves of 4-5 sprigs fresh thyme

  • 6 medium eggs - hardboiled and peeled

  • 100g plain flour

  • 3 eggs - lightly beaten

  • 250g breadcrumbs

[Steps]

  1. Mix sausage meat with allspice and thyme in a mixing bowl till well combined. Chill covered with cling wrap for 30mins.

  2. Divide meat into 6 equal portions and roll each portion into a ball with floured hands, then flatten into a disc.

  3. Place egg onto meat and enclose egg completely. Repeat for the rest.

  4. Place flour, beaten egg and breadcrumbs into 3 separate dish. Roll scotch egg in flour, followed by egg, and lastly breadcrumbs. Roll lightly in your hands to press in the breadcrumbs. Repeat for the rest.

  5. Fill a pan 3/4 with oil and heat till 170degC.

  6. Deep fry prepared scotch eggs, 2 at a time, for 7-8mins till deep golden brown. Serve warm.
