[Ingredients]
300g glutinuous rice flour
2tbsp sugar
Pandan flavouring
Green colouring
200ml water
100g gula melaka (chopped)
150g grated coconut
Some salt
[Steps]
Sift glutinuous rice flour onto a plate and combine with sugar.
Add pandan flavouring and green colouring into the water and mix well. Add the pandan mixture into the flour mixture. Put a small piece of dough (about 50g) into boiling water and cook till it floats. Remove and knead in with the rest of the dough. Set aside for about 15mins before dividing into 40 balls.
Fill each portion of dough with gula melaka and shape into a ball. Lay the balls on a plate sprinkled with some glutinuous rice flour to prevent sticking.
Bring a pot of water to boil. Cook the glutinuous balls till they float. Continue boiling for a minute then remove. Rinse with cold water and drain.
Combine grated coconut and salt. Steam the mixture over high heat for about 5mins.
Coat the glutinuous balls with grated coconut before serving.
TIP: it is not advisable to coat cooked glutinous rice balls with raw grated coconut. the grated coconut has to be mixed with salt and steamed before using, allowing it to last longer.
