[Ingredients A]
50g sifted plain flour
50ml water
1tsp dry yeast
[Ingredients B]
200g sifted plain flour
2tsp double action baking powder
200g pared and steamed pumpkin - cut into small pieces
100ml coconut milk
50ml water
140g brown sugar
1 egg
[Steps]
Mix A ingredients together and set aside 1/2hr to proof.
Sift plain flour and baking powder together.
Put in pumpkin, coconut milk, water, brown sugar and egg in a mixer and mix well.
Fold in plain flour, baking powder and A till well blended.
Line aluminum cups with cupcake holders. Pour batter into cups until 90% filled and set aside 15mins to proof.
Steam cups over high heat for 15mins.
