Pumpkin Huat Kueh


[Ingredients A]

  • 50g sifted plain flour

  • 50ml water

  • 1tsp dry yeast

[Ingredients B]

  • 200g sifted plain flour

  • 2tsp double action baking powder

  • 200g pared and steamed pumpkin - cut into small pieces

  • 100ml coconut milk

  • 50ml water

  • 140g brown sugar

  • 1 egg

[Steps]

  1. Mix A ingredients together and set aside 1/2hr to proof.

  2. Sift plain flour and baking powder together.

  3. Put in pumpkin, coconut milk, water, brown sugar and egg in a mixer and mix well.

  4. Fold in plain flour, baking powder and A till well blended.

  5. Line aluminum cups with cupcake holders. Pour batter into cups until 90% filled and set aside 15mins to proof.

  6. Steam cups over high heat for 15mins.
