Sugar Cookies

[Ingredients]

  • 100g softened butter

  • 75g sugar

  • 30g egg

  • 100g cake flour

  • 50g almond powder

  • 1/2tsp baking soda

  • 1/4tsp baking powder

  • Pinch of salt

  • 1/4tsp vanilla essence

  • Caster sugar – for coating

  • Bread flour – for dusting

[Steps]

  1. Whisk butter till loosen. Whisk in sugar.

  2. Beat egg, whisk in, followed by vanilla and salt.

  3. Sift flour, almond, baking soda and baking powder. Fold into mixture.

  4. Cover bowl with cling film and let chill 30mins.

  5. Dust hands with bread flour and divide dough into 15g portions. Roll each portion into the shape of a quail egg and coat one side with sugar, flattening it slightly.

  6. Place dough with coated side facing up on a baking tray and bake in a preheated oven of 170degC for 15-20mins until golden brown.
