[Ingredients]
4 cobs sweetcorn
2 rashers diced bacon
5 peeled and diced small potatoes
2 stalk diced celery
1 peeled and diced carrot
1/2 diced yellow onion
1 litre chicken broth
250ml double cream
Salt and pepper
[Steps]
Free corn kernels from cob. Discard cobs.
Set a pot over medium heat. Saute bacon until crisp, about 8mins.
Add corn, potatoes, celery, carrot, onion, broth and cream. Stir well.
Raise heat to high and bring to a boil. Reduce heat to medium low and simmer uncovered until vegetables are tender, about 20mins.
Season with salt and pepper.
