Sweetcorn Chowder Soup


[Ingredients]

  • 4 cobs sweetcorn

  • 2 rashers diced bacon

  • 5 peeled and diced small potatoes

  • 2 stalk diced celery

  • 1 peeled and diced carrot

  • 1/2 diced yellow onion

  • 1 litre chicken broth

  • 250ml double cream

  • Salt and pepper

[Steps]

  1. Free corn kernels from cob. Discard cobs.

  2. Set a pot over medium heat. Saute bacon until crisp, about 8mins.

  3. Add corn, potatoes, celery, carrot, onion, broth and cream. Stir well.

  4. Raise heat to high and bring to a boil. Reduce heat to medium low and simmer uncovered until vegetables are tender, about 20mins.

  5. Season with salt and pepper.
