Egg Drop Soup


[Ingredients]

  • 1 lightly beaten egg

  • 2tsp sesame oil

  • 1.2 litres chicken stock

  • 1tsp sugar

  • 1tsp salt

  • 1tbsp light soy sauce

  • 3tbsp finely shredded spring onion

  • Chopped spring onion

  • Pepper

  • 1 tomato - cut into 8 wedges

[Steps]

  1. Place egg and sesame oil in a small bowl, mix using a fork and set aside.

  2. Place stock into a pot and bring to simmer. Add sugar, salt and soy sauce, mix well.

  3. Stir in spring onion shreds.

  4. Add the egg in a very slow, thin stream.

  5. Using a pair of chopsticks or fork, pull the egg slowly into strands - stir the egg in figures of eight.

  6. Place tomatoes in the bowl and pour soup over.

  7. Sprinkle pepper over and serve garnished with spring onion.
