[Ingredients]
1 lightly beaten egg
2tsp sesame oil
1.2 litres chicken stock
1tsp sugar
1tsp salt
1tbsp light soy sauce
3tbsp finely shredded spring onion
Chopped spring onion
Pepper
1 tomato - cut into 8 wedges
[Steps]
Place egg and sesame oil in a small bowl, mix using a fork and set aside.
Place stock into a pot and bring to simmer. Add sugar, salt and soy sauce, mix well.
Stir in spring onion shreds.
Add the egg in a very slow, thin stream.
Using a pair of chopsticks or fork, pull the egg slowly into strands - stir the egg in figures of eight.
Place tomatoes in the bowl and pour soup over.
Sprinkle pepper over and serve garnished with spring onion.
