Minestrone Soup

[Ingredients]

  • 30g finely chopped yellow onions

  • 30g leek - paysanne

  • 30g celery - paysanne

  • 30g carrot - paysanne

  • 30g peeled potato - paysanne

  • 30g cabbage - paysanne

  • 50g tomato pronto

  • 20g tomato paste

  • 1L chicken stock

  • 10g canned, drained kidney beans

  • 10g desire pasta (if using spaghetti, break into 3cm lengths)

  • Salt and pepper

  • 4tbsp oil

  • Pinch of oregano

  • Grated parmesan cheese

[Steps]

  1. Heat oil in pan, sweat onions.

  2. Add in celery, carrot, potato and cabbage. When vegetables are soft, add in tomato paste, stir well, followed by tomato pronto and oregano.

  3. Add in stock. Bring to boil and let simmer.

  4. After 15mins, add in leek, kidney beans and pasta. Simmer for another 10-15mins.

  5. Adjust seasoning and serve with parmesan.
