Chocolate Ice Cream


[Ingredients]

  • 4 egg yolks

  • 6tbsp caster sugar

  • 1tsp cornstarch

  • 300ml semi skimmed milk

  • 200g dark chocolate

  • 300ml whipping cream

  • Shaved chocolates for decoration

[Steps]

  1. Whisk egg yolks, sugar and cornstarch in a bowl until thick and foamy.

  2. Pour milk into a saucepan, bring to just boil then gradually whisk into yolks.

  3. Return mixture to pan and cook over low heat, stirring constantly until it thickens (this is custard) and is smooth. Remove from heat.

  4. Break chocolate into small pieces and stir into hot custard until it has melted. Leave to cool then chill.

  5. Whip cream until just thickened but still falls off from a spoon.

  6. Fold cream into custard and pour into a container. Freeze for 6hrs, beating once or twice using a fork or a food processor.

  7. Serve in scoops and decorate with chocolate shavings.
