[Ingredients]
675g cooking apples
50g unsalted butter
1/4tsp ground mixed spice
Zest and juice of 1 lemon
90g cream cheese
2 beaten egg whites
150ml double cream
Mint sprigs for decoration
[Steps]
Peel, core and slice apples. Melt butter in saucepan. Add apple, mixed spice and lemon zest. Cover and cook for 10mins until apples are soft. Leave to cool.
Place apple mixture in a food processor, followed by cheese and lemon juice. Blend until smooth.
In a bowl, whisk egg whites until stiff. In another bowl, whisk cream until soft peaks form.
Scrape apple puree into a bowl. Fold in cream then egg whites. Spoon into a container and freeze overnight.
Scoop ice cream onto plates and decorate with mint leaves.
