[Ingredients]
150g fresh root ginger
115g caster sugar
300ml water
5 kiwi fruit
Fresh mint sprigs and chopped kiwi fruit for decoration
[Steps]
Peel and grate ginger finely. Bring sugar and water to a boil, stirring until the sugar has dissolved.
Add ginger in and cook for 1min, leave to cool. Strain into bowl and chill until very cold.
Peel kiwi and blend until smooth. Add puree to syrup and mix well. Pour into a container and freeze for 3 to 4hrs.
Beat sorbet twice and return to freezer. Spoon into glasses and decorate with mint leaves and chopped kiwi.
