[Ingredients]
300g glutinous rice
300g chicken
2tbsp dark soy sauce
Some cornstarch
5 chinese mushrooms
2tbsp dried shrimp
4 fresh lotus leaves
2tbsp sesame oil
1/2 tsp salt
1tbsp sugar
1/4 tsp pepper
3tbsp deep-fried shallots
[Steps]
Rinse glutinuous rice. Soak in water for about 1 hour and drain. Cut chicken into small pieces, add 1tbsp dark soy sauce and cornstarch to mix well. Soak mushroom in water till soft. Pinch dry, remove the stems and cut into shreds. Rinse dried shrimps and soak in water till soft.
Rinse lotus leaves and scald in boiling water till soft. Trim away the stems and cut each into 4 pieces.
Lay a piece of cloth in the steaming basket and spread the glutinuous rice on it. Steam over high heat for about 20mins. Sprinkle some water on the rice, mix well, then continue to steam for about 10mins.
Heat 4tbsp of oil and fry chicken till 80% cooked. Drain away the oil. Heat up sesame oil and fry mushrooms and dried shrimps till fragrant. Add the remaining dark soy sauce, salt, sugar and pepper. Combine well, then mix well with glutinuous rice. Add deep-fried shallots and mix well. Divide into 16 equal portions.
Place 1 portion of glutinuous rice on a lotus leaf. Top with 2 pieces of chicken and wrap into a cylinder shape. Place in the steamer to steam for another 20mins.
