Veggie Shooters


[Ingredients]

  • 3/4 cup fat-free sour cream

  • 3/4 cup fat-free greek yogurt

  • 1/3 cup light mayonnaise

  • 1tsp garlic powder

  • 1tsp onion powder

  • 1tbsp chopped chives/dill

  • 1tbsp chopped parsley

  • 1tsp salt

  • Ground pepper

  • 1-2tbsp white balsamic vinegar

  • 1 cup low-fat buttermilk

[Vegetable]

  • 1 yellow capsicum - cut into strips

  • 1 red capsicum - cut into strips

  • 1 large japanese cucumber - cut into strips

  • 3 medium peeled carrots - cut into stropes

  • 11 baby arugula leaves

  • 11 shot glasses

[Steps]

  1. Dip: Combine cream, yogurt, mayo, garlic, onion, parsley, chives, salt and pepper together, mix well.

  2. Add in vinegar, then buttermilk. Adjust seasonings.

  3. Fill shot glasses with dip and assemble vegetables as shown.
