Texas Cheese Fries


[Ingredients]

  • 2 medium potatoes (yukon gold or russet) washed and dried

  • 2tsp olive oil

  • 1tsp smoked paprika

  • 1/4tsp chili powder

  • 1/4tsp onion powder

  • 1/4tsp garlic powder

  • 1/tsp cumin

  • Coarse salt and pepper

  • 1 sliced cooked and finely chopped bacon

  • 1/3 cup shredded cheddar

  • 2tbsp diced scallions

  • 1tbsp sliced pickled Jalapeno (jarred or canned)

[Steps]

  1. Preheat oven 205degC. Line baking tray with foil. Lightly spray with cooking oil.

  2. Cut each potato lengthways into 1/4-inch slices, then cut each slice into 1/4-inch fries.

  3. In a large bowl, combine potatoes with oil and toss well. Add paprika, salt and pepper. Toss well.

  4. Place potatoes in a single layer on the baking tray. Bake uncovered for 25mins or until tender crisp, turning once halfway thru.

  5. Remove fries from oven. Top with cheese, jalapenos, scallions and bacon. Bake for another 2mins, or until cheese melts.

  6. Serve with low fat buttermilk ranch dressing.
