Spinach Salad

[Ingredients]

  • 10oz baby spinach

  • 8 slices bacon, cooked and chopped

  • 8oz white mushrooms, sliced

  • 1/2 red onion, thinly sliced

  • 6 hard boiled eggs, sliced

[Dressing]

  • 1/2 cup granulated sugar

  • 1/2 cup ketchup

  • 1/2 cup water

  • 1/2 cup white vinegar

[Steps]

  • Dressing: whisk ingredients together in a saucepan over low heat for 1hr, stirring occasionally. Let cool slightly and re-whisk before serving.

  • Arrange spinach on serving plates, top with bacon, mushroom, onion and egg. Sprinkle salt and pepper over, drizzle dressing over top and serve.

  • Store remaining dressing chilled in an airtight container.
