[Ingredients]
10oz baby spinach
8 slices bacon, cooked and chopped
8oz white mushrooms, sliced
1/2 red onion, thinly sliced
6 hard boiled eggs, sliced
[Dressing]
1/2 cup granulated sugar
1/2 cup ketchup
1/2 cup water
1/2 cup white vinegar
[Steps]
Dressing: whisk ingredients together in a saucepan over low heat for 1hr, stirring occasionally. Let cool slightly and re-whisk before serving.
Arrange spinach on serving plates, top with bacon, mushroom, onion and egg. Sprinkle salt and pepper over, drizzle dressing over top and serve.
Store remaining dressing chilled in an airtight container.
